1.1. La presente Norma es de
observancia obligatoria en todo el territorio
nacional y tiene por objeto, establecer los
procedimientos que deben cumplir los
establecimientos destinados al sacrificio de
animales y los que industrialicen, procesen,
empaquen, refrigeren productos o subproductos
cárnicos para consumo humano, con el propósito de
obtener productos de óptima calidad higiénico-sanitaria. |

The present Standard is of obligatory observance in
all the National territory and has as its objective,
to establish the procedures that the establishments
designated for the slaughter of animals and those
that manufacture, process, pack, refrigerate meat
products or byproducts for human consumption, for
the purpose of obtaining products of highest
hygienic sanitary quality, must comply with. |
